Summer Salad Dressing

Finally after about 4 months off, not writing any blog posts I am back for you with an absolute beauty of a salad dressing! I’ve had so much going on recently growing the business and trying to sort all the behind the scenes paperwork and boring stuff out while still trying to have a life of course …. That I haven’t had the chance to sit in front of the laptop and write for you guys!

This recipe is great for the summer because –> Summer = Salads. Most salad dressings that you buy ready from the supermarket are super high in saturated fats, chemicals and basically just shit for your body. MY salad dressing is all organic, natural foods, stays good for about 1 month when kept in the fridge and super easy to make! Win, win situation guys!

I’m the type of girl who if there are more than 9 ingredients in a recipe or it takes longer than 20 minutes to make…..I don’t bother. I need quick and easy recipes, that taste great but don’t take too much of my precious time, and I bet your bottom dollar…..you guys love them too!

So here we go!

Ingredients (makes around ½ litre – 1 litre):

  • 125ml white wine vinegar
  • 500ml salad oil (I chose olive oil this time but I often add a mixture of other oils such as pistachio oil or avocado oil etc. just to add some extra flavour. The better the quality of oil, the better your salad dressing will be!)
  • 2 handful fresh herbs (I used parsley, chives and coriander this time but its up to your taste)
  • 1 or 2 charlotte onion (
  • 1 clove of garlic
  • 1 tbsp salt
  • 2 tbsp mustard (I use Austrian estrogan mustard but dijon would be great too)
  • 1 tsp pepper

Now here comes the difficult bit 😉

  1. Throw it all into your blender (I always use my Vitamix), mix, and voila!

You have a yummy, home made, healthy, organic, easy peasy delicious salad dressing in a matter of minutes!

TOP TOP: Make sure you sterilise the bottle you will be keeping the dressing in so that it will keep as long as possible. You can do this by swilling it out with boiling water.
