Low Carb Options – Chilli Con Carne

Like I have mentioned before, I am not the best chef, if anything I’m a lazy chef. But when it comes to quick and easy recipes, I’m the bomb diggity. Last night I made a yummy chilli con carne and I actually surprised myself how good it tasted! It does take slightly longer but it’s worth it!

I’m not the biggest fan of minced meat so I also like to have a little something to mix into it. One great healthy alternative to a starchy carbohydrate like rice or garlic bread is (if you want to lose weight or just have a lighter meal, fibrous carbohydrates are much better)cauliflower rice. You won’t believe me if you have never tried it, but it honestly is a super yummy version of rice that doesn’t take long to make and the consistency is almost the same!

I just threw everything in so I hope I can correctly recollect it for you 😉

Ingredients:

  • 1 tsp Cooking oil (coconut or olive)
  • 2 crushed/ chopped garlic cloves
  • 1 large onion chopped
  • 1 pepper chopped
  • 500g lean minced beef
  • 500 ml pureed tomatoes
  • 2 tbsp tomato paste
  • 150 ml beef stock
  • 3 tsp cumin
  • 2 tsp salt
  • 2 tsp pepper
  • 2 tsp paprika
  • chilli flakes – to taste
  • 1 can of kidney beans (optional – I personally don’t love them but they’re a good source of protein)

 

Method:   Makes around 2-3 portions depending on hunger.

  1. Heat the oil in a pan, add the onion and pepper.
  2. When the onion and pepper are soft add the meat, stir and break it up on a medium heat.
  3. Spread the cumin, salt, pepper, paprika, chilli and garlic into the pan and mix throughout thoroughly.
  4. When meat is half browned pour over the stock, tomato puree and tomato paste.
  5. If you have beans, this would be the time to throw them in and mix thoroughly.
  6. At this point there is a lot of excess liquid in the pan, I then leave the mix to simmer over a low-medium heat for 15-20 minutes.

Voila! You have a yummy low carb, healthy meal in a matter of minutes.
